SAF: How much fresh water is needed on a daily basis to maintain just one person in the US?

Postel: The "water footprint" of the average U.S. resident is 1800 gallons per day - twice the global average. Less than 10 percent of that is used in and around our homes for cooking, showering, flushing toilets, watering lawns, etc. Most of it - about 70 percent- is the water used to produce the food we eat. The average hamburger - a whopping 630 gallons.

SAF: How much/what percentage of the earth’s fresh water is actually usable to the human population?

Postel: Less than one-hundredth of one percent of all the water on Earth is fresh water renewed by the hydrological cycle. More than 97 percent is salty sea water, and another 2 percent is locked up in glaciers and ice caps.

SAF: What role do forests play in maintaining a healthy freshwater source?

Postel: Forests are incredibly important to our freshwater supplies. I like to think of healthy, forested watersheds as nature's water factories - helping churn out reliable, high-quality water. In the United States, forests of all kinds, public and private, contribute about two-thirds of our renewable water supply.
